In the Middle East, hummus has been a part of the daily menu for centuries. In recent years, this chickpea-based paste has also become incredibly popular in the Netherlands. And it's no wonder: hummus is not only delicious on fresh bread, but also great as a salad dressing, a dip for roasted vegetables, and an ideal ingredient to use as a flavor enhancer in dishes. The possibilities are endless!

 

In addition to the main ingredient, chickpeas, the original recipe for hummus – also written as houmous, humus, or humous – consists of tahini (sesame paste), olive oil, lemon juice, garlic, pepper, and salt. Originating from the Levant as part of Lebanese cuisine, hummus is also incredibly popular throughout the Middle East, North Africa, and Turkey.

For years, De Menken Keuken has been making hummus that is distributed across Europe. "To create the tastiest hummus, we have long-standing partnerships with trusted suppliers. For example, the chickpeas come from France, where the right size and best quality are selected for us," says Elise Rijnhout from De Menken Keuken. "Tahini is the key flavoring in hummus. It comes from Israel, and that's no coincidence – they really know how to make the most delicious hummus."

 

Production Process

 

The production process is intricate and is carefully followed at De Menken Keuken. "Dried chickpeas are the best base for a flavorful hummus. These are first soaked and then cooked in our own process. To achieve the best taste, the skins are also removed," explains Rijnhout. The cooked chickpeas are then ground and ready to be mixed with the tahini and other ingredients in a large 'food processor.' "We control every step of the process at De Menken Keuken, ensuring that we have complete control over the quality."

De Menken Keuken offers hummus in a variety of different flavors. From the classic version to beetroot. Each variation is freshly made with the greatest care. "One example is our pumpkin hummus. For this recipe, we only use fresh pumpkins. The pumpkins are de-seeded, chopped, roasted, pureed, and then added to the hummus. The result is absolutely delicious!"
